Ingredients:

Large pinch of salt & sugar

2 tbsp vegan Butter

Sundried tomatoes

½ red onion

2 tbsp balsamic vinegar

2 x slices sourdough
Method:
Cook ½ sliced red onion and 1 tbsp vegan butter in a frying pan on medium heat. Stir for a few minutes before adding a large pinch of salt and sugar. Keep stirring until your onions are brown and add a good glug of balsamic vinegar. Keep on stirring until your onions are nice and caramelised and place to the side.
Grab two slices of sourdough & spread with vegan butter or spread. Add Ched Spread to the top of one slice (as much as you dare) and top with the onions and a few sundried tomatoes if you’re feeling extra wild. Add the other slice of sourdough on top.
Put the frying pan back on the heat with another dash of butter and once sizzling, add your toastie. Apply pressure to your sandwich using a slightly smaller pan lid to get that nice crispy bottom! Cook for several minutes on each side until golden brown.
Cut, stack, devour!
