Veganzola, Pear & Walnut Salad

Ingredients: 

Dressing

  • 1 tbsp maple syrup
  • 1 tbsp olive oil
  • 1 tbsp wholegrain mustard
  • 4 tbsp white wine vinegar

Salad

  • Bowl of mixed leaves
  • 1 Pear
  • Handful of grapes
  • Large handful walnuts
  • Veganzola

Method:

Put a frying pan on medium heat and throw in a handful of walnuts with a drizzle of olive oil & salt. Cook for a couple of minutes until golden & toasted before putting to one side.

Make the dressing by mixing together the maple syrup, olive oil, wholegrain mustard and white wine vinegar.

Chop up 1 pear & a handful of grapes and throw in the salad with toasted walnuts & crumbled Veganzola – the more the better! Dig in!
