Ingredients:
- 2 large handfuls of lettuce
- A large handful of croutons
- 1 avocado, diced
- ½ Ched Spread
- Pre-cooked VG chicken &/or bacon
Dressing
- 1 garlic clove, minced
- 2 tbsp nutritional yeast
- 60g VG mayo
- 1 tbsp white wine vinegar
- Juice of ½ lemon
- A tsp of capers, chopped finely
- Salt and pepper to taste
Method:
Add all the dressing ingredients to a jar and mix well until smooth. Add your lettuce to a large serving bowl, and then add the vegan chicken or bacon, croutons, diced avocado and chunks of Ched Spread (we used about ½ but feel free to add more!). Toss to combine.
Pour on the dressing to your salad a little at a time, and keep mixing together until you’ve got the right ratio of salad to dressing. Add any other toppings you might like and serve.
