Vegan Brie, Rocket Pesto & Balsamic Onion Toastie

2 slices of bread,
65g Honestly Tasty Bree,
1 red onion,
1 tsp sugar,
1 tbsp balsamic vinegar,
60g rocket,
20g walnuts, toasted,
1⁄2 clove garlic,
60ml olive oil,
1 lemon,

Method
Heat a frying pan to medium heat, add 1 tbsp olive oil, add the onion and a sprinkle of salt, fry the onion for 5-6 mins until beginning to golden and caramelise. Add the sugar and balsamic and cook until glossy and sticky. Set aside.
Place the rocket, walnuts, garlic, 50ml of olive oil and a good squeeze of lemon into a food processor. Blend until smooth and season to taste. Set aside.
Start assembling the toasty by layering the bree, pesto and balsamic onions onto one side of bread and pressing down with the other slice of bread. Heat a frying pan to a medium heat and drizzle with olive oil. Place the toasty on the pan and weigh down with a plate and press gently, cook for 3-4 minutes until golden. Flip and do the same on the other side.
● Tips
Don’t have time to make pesto from scratch or caramelise the onions, use a jar to make things a little speedier!
