Vegan Brie, Peach & Chicken Salad

With no sign of the heatwave stopping, we're doing all we can to stay cool and keep it cheesy. We've googled "no cook dinners" A LOT and managed to get both cheesy and creative with salad! Here's a favourite for you to try this weekend, it's incredibly easy and as ever - honestly tasty.
Vegan Brie, Peach and Chicken salad

Ingredients: 

  • 🍑 1 Peach, sliced and grilled
  • 🐣 Vegan chicken - we used Squeaky Bean’s chargrilled cajun chicken
  • 🧀 1 x Bree
  • 🥗 Mixed salad leaves
  • 🥜A large handful of pecan nuts, chopped
  • 🍎 2 tbsp apple cider vinegar
  • 🍯 1 tsp vegan honey or agave
  • 🫒 3 tablespoon olive oil
  • 🥣 1 teaspoon wholegrain mustard
  • 🍃1 teaspoon dried oregano
  • 🧂Salt & pepper

Method:

Tumble your salad leaves into a big serving dish and scatter over the peach slices, chicken, chunks of vegan brie and nuts. Loosely toss together.

Mix together / shake up your dressing. Add the vinegar, honey, olive oil, mustard, oregano and seasoning to a jar with a lid. Seal, shake and drizzle!
