This salad is a bit of a chuck it all in and hopes for the best kinda job! You can’t go far wrong with these ingredients and the rough method below, but keep taste-testing as you go to make sure it suits your tastes.
Chop your tomatoes thinly. Add to a large serving bowl and toss with a generous glug of olive oil, a quick dash of apple cider vinegar, a dash of lemon juice and a generous pinch of salt. Toss to combine. Add a few small dollops of harissa (we love rose harissa), on top of your tomatoes, and then do the same with large chunks of Sham or Bree. Finish with chopped basil leaves.
