Ingredients (for 2):
- Shamembert - we used ½
- Veganzola - Blue - we used approx. ⅓ block
- Pasta of choice - approx. 180g
- Juice of 1 lemon
- Salt & pepper to taste
- A large handful chopped chives
- Chopped walnuts to serve & a good drizzle of extra virgin olive oil
Start by cooking the pasta as per the instructions.
Once soft, drain and place back in the pan on a low heat. Add your Sham (without the rind), the juice of a lemon, salt and pepper to taste, chives and ¾ of your blue cheese.
Adjust your flavours to taste - add extra cheese, a spoonful of crème fraiche or extra seasoning - the cheesier the better in our opinion! Serve up and add a handful of crushed walnuts, crumbled blue & a good drizzle of olive oil to finish each bowl.
