Ingredients

Shamembert - we used ½

Blue - we used approx. ⅓ block

Pasta of choice - approx. 180g

Juice of 1 lemon

Salt & pepper to taste

A large handful chopped chives

Chopped walnuts to serve & a good drizzle of extra virgin olive oil

Sham & Blue Oh So Cheesy Pasta

Method

Cook the pasta by following the instructions on pack

Once al dente, drain and place back in the pan on a low heat. Add your Sham (without the rind), the juice of a lemon, salt and pepper to taste, chives and ¾ of your blue cheese.

Adjust your flavours to taste - add extra cheese, a spoonful of vegan crème fraiche or extra seasoning - the cheesier the better in our opinion! Serve up and add a handful of crushed walnuts, crumbled blue & a good drizzle of olive oil to finish each bowl.

Works just as well with bitter greens fried and added - we love cavolo nero in this!
