Sham, Harissa & Fried Tofu Toastie

 Ingredients:

  • Sham - approx. 1/2 
  • Tofu - about 4 thin slices, depending on how big your bread is!
  • Harissa - a couple tsp 
  • Sourdough or your favourite bread - 2 slices 
  • Vegan butter

Method: 

First, slice the tofu and cover with harissa. 

Place a large spoon of butter in a frying pan and melt on a medium heat. Once sizzling, add the tofu slices and fry for a few minutes on each side until golden brown. Remove from the pan before adding another chunk of butter to your pan and your slices of bread. 

To one slice, add some generous chunks of Sham, then place your crispy tofu slices on top. You can add either add a little extra harissa to the top, or a sweeter tomato chutney if you don’t want the added heat!  Sandwich the other slice of bread on the top and place a small pan lid on top of your toastie to add some pressure.

Once the bottom side is nice, crisp and golden brown, flip it over to crisp up the other side too – don’t worry if a bit of cheese leaks out; the messier the better we say! Once nicely browned, simply slide your toastie onto a plate, slice in half and eat!
