Roast Veg & Blue Tray Bake

 

Ingredients: 

  • ½ butternut squash
  • 1 red onion
  • 1 red pepper
  • 1 courgette
  • 2 tbsp oil
  • 2 crushed garlic cloves
  • Salt & pepper
  • 1 tsp smoked paprika
  • Honestly Tasty Veganzola (the more the better!)
  • Large handful of walnuts & a drizzle of maple syrup to serve

Method:

Preheat the oven to 170°C. Chop up all the veggies into small, bite-sized pieces and add to a baking tray with the garlic cloves. Cover generously with oil, paprika and salt and pepper. Cook for 45-50 minutes, or until well cooked.

To serve, add some large chunks of Veganzola, with chopped walnuts and a generous drizzle of maple syrup!
