- ½ butternut squash
- 1 red onion
- 1 red pepper
- 1 courgette
- 2 tbsp oil
- 2 crushed garlic cloves
- Salt & pepper
- 1 tsp smoked paprika
- Honestly Tasty Veganzola (the more the better!)
- Large handful of walnuts & a drizzle of maple syrup to serve
Preheat the oven to 170°C. Chop up all the veggies into small, bite-sized pieces and add to a baking tray with the garlic cloves. Cover generously with oil, paprika and salt and pepper. Cook for 45-50 minutes, or until well cooked.
To serve, add some large chunks of Veganzola, with chopped walnuts and a generous drizzle of maple syrup!
