Prepared by spreading a generous layer of pesto on sourdough, topped with roasted red pepper and vegan camembert, then crisped to perfection in a pan, this sandwich is a new take on the traditional cheese toastie. Enjoy this quick, satisfying meal as a quick snack, or tasty lunch (perhaps bulked out with some greens / salad on the side!).

 

Ingredients

Vegan pesto

1 x Roasted Red Pepper

Honestly Tasty Shamembmert (how much? Your choice!)

2 x slices sourdough

Vegan butter or spread

Pesto, Red Pepper & Sham Toastie

Method

- Spread a chunky dollop of pesto on both slices of bread.

- On one slice, add a pre-roasted red pepper and a generous serving of Sham on top. Pop your other slice of bread on top - a sandwich, viola!

- Heat a tbsp of vegan butter or spread in a frying pan on medium heat. Once hot, add in your sandwich. Use a smaller frying pan lid to add pressure and get the bottom nice and crisp! ⁠⠀

- Cook for a couple of minutes on one side - until golden brown - flip, repeat and serve!
