Vegan Reuben Sandwich

A Reuben sandwich is a classic American grilled sandwich that combines several distinct ingredients to create a unique and flavourful combination. Traditionally, the Reuben sandwich consists of:

  1. Corned Beef or Pastrami:  Thinly sliced, this is the main protein component of the sandwich. We LOVE Sgaia's Pastrami style slices.
  2. Swiss Cheese: Adds a mild, nutty flavor that melts well. We swap this out for our earthy, truffled Shamembert and it works a treat.
  3. Sauerkraut: Provides a tangy contrast to the rich flavours of the (vegan) meat and cheese.
  4. Russian or Thousand Island Dressing: A sweet and tangy sauce that adds moisture and binds all the other components together.
  5. Rye Bread: Typically used for its firm texture and slightly sour flavour, which complements the other ingredients. But you can definitely use any bread you have to hand

The ingredients are  typically assembled on rye bread, with cheese placed close to the bread to ensure a good melt, and the whole sandwich is then grilled or toasted until the bread is crispy and the cheese is melted. The combination of the savoury pastrami, the tangy sauerkraut, the melting cheese, and the creamy dressing makes for a richly satisfying meal typically served with pickles on the side.

The Reuben sandwich is often associated with delis in New York City, though its exact origins are debated, with several stories claiming its invention in the early 20th century. Regardless of its origins, it remains a beloved choice for a hearty, flavourful sandwich! Our recipe below offers a simplified sandwich version, that can easily be toasted. The thousand island dressing is definitely optional, but if you fancy it, here's a quick how-to on making it vegan: 

Ingredients:

  • 1 cup vegan mayonnaise
  • 1/4 cup ketchup
  • 1/4 cup finely chopped pickles (or pickle relish)
  • 1 tablespoon finely chopped onion
  • 1 teaspoon white vinegar
  • 1 teaspoon sugar (optional, adjust to taste)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • A dash of hot sauce (optional, for a spicy kick)

Instructions:

  1. Combine Ingredients: In a bowl, mix together the vegan mayonnaise, ketchup, chopped pickles, chopped onion, vinegar, sugar (if using), salt, and black pepper. Stir well to combine all the ingredients thoroughly.

  2. Adjust Flavor: Taste and adjust the seasoning as needed. If you like a bit of heat, add a dash of hot sauce. For a sweeter dressing, you can add a little more sugar.

  3. Chill: Cover and refrigerate the dressing for at least 30 minutes before serving. This allows the flavors to meld together nicely.

  4. Serve: Use your vegan Thousand Island dressing on salads, as a dipping sauce, or spread on sandwiches. It pairs exceptionally well with leafy greens or as a dressing for a vegan Reuben sandwich.

Lettuce leaves

Method

Butter your bread, then layer up your sandwich with slices of shamembert, pastrami and sauerkraut! Finish off with lettuce and a few dollops of chutney (or, slather your bread in chutney instead of butter!) and then sandwich together and enjoy.

Take out the lettuce if you want to turn it into an epic Rueben toastie! Add a dollop of vegan butter into a frying pan and once hot, add your sandwich. Let the bottom crisp and then flip - applying a frying pan lid on top that's smaller than the pan itself - this really helps crisp things up so you get a super taste crunch when you tuck in!
