This toastie is the perfect way to use up leftovers you have lingering in the fridge. We mixed some harissa roasted cauliflower in with small chunks of tofu, extra harissa and a small spoon of mayo... alongside half a shamembert and some chilli relish.
You'll need...
- Two slices of sourdough
- Vegan butter or dairy free spread
- Any leftover roasted veg/ salad / spuds. Whack them in!
- 1 tbsp vegan mayo and chilli relish
- ½ Sham
Butter your bread, and heat a little extra butter in a frying pan - toast the slices lightly. Add shamembert to one slice and top with chilli relish, then add your leftover veg mix to the other slice. Warm through for a couple of minutes and then sandwich everything together. Pop a lid over the whole thing to melt/toast for a little longer... super easy, honestly tasty. Tuck in, and enjoy!
