Mummified Jalapeño Poppers

Halloween food should be a little bit silly, and honestly tasty. These vegan jalapeño poppers are both. Each one is stuffed with our creamy Garlic & Herb, wrapped in strips of puff pastry like bandages, and baked until golden. Two peppercorn eyes and they're ready to stare back at your guests.

They're one of the easiest Halloween party snacks you can make. They take 35 minutes from start to finish, make 16 at a time, and disappear faster than you can say "trick or treat". The heat from the jalapeño is softened by the cool, garlicky filling, with a hint of smoke underneath. Make a tray for the grown-ups, or scrape out every seed for the little ones.

Ingredients

• 8 large jalapeños

• 1 pot Honestly Tasty Garlic & Herb

• 1 sheet ready-rolled puff pastry (most supermarket ones are plant-based, but check the label)

• 1 tbsp plant milk, for brushing

• Black peppercorns for the eyes, or shop bought googly eyes

Method

• Heat the oven to 200°C (180°C fan) and line a baking tray.
• Halve the jalapeños lengthways and scrape out the seeds and white membrane.
• Lightly aerate the cheese, loosing it with a fork, and then pack it into each jalapeño half.
• Cut the pastry into thin strips, about 5mm wide. Wrap them around each popper like bandages, criss-crossing as you go and leaving a small gap near the top for the eyes.
• Brush the pastry with plant milk and bake for 18–20 minutes, until golden and puffed.
• Press two peppercorns into each gap for eyes (or get googly ones if you can easily source!).
• Leave to cool for 5 minutes before eating, then enjoy.
