Hasselback Potatoes with Garlic & Herb Vegan Cheese

12 x baby potatoes
½ pack vegan bacon
Herbi cheese – tsp’s to add on top of your potatoes (about 1/3 – ½ a pot)
Olive oil
Salt & pepper
Method
Preheat oven to 200c. Line a baking tray. Take about 12 baby potatoes and slice along the long side of each potato every ¼ an inch, going ¾ of the way through (be careful not to cut all the way through the potato) – use the BBC Good Food article for a better explanation!
Brush a generous amount of oil all over your potatoes (including in the slices), add salt and pepper and bake for about 30 minutes.
Brush with oil again and add diced vegan bacon on top. Bake for another 30 minutes, or until golden brown. Top with cubes of our plant-based garlic and herb cheese (Herbi) and serve.
