Ingredients

1 wheel of Shamembert (160g)

2 small garlic cloves, thinly sliced

2 rosemary sprigs, leaves picked

3 tbsp olive oil

200g dried rigatoni

200ml vegan double cream

2 large handfuls of baby spinach leaves

100g sun dried tomatoes

3 to 4 slices smoked vegan ham (we use La Vie)

Baked Camembert Pasta Alfredo

Method

Step 1:
Preheat your oven to 200°C/180°C fan/gas 6. Slice the shamembert in half horizontally. Place one half, cut-side up, in a large baking dish. Set the other half aside.

Step 2:
Insert half the garlic and rosemary into the cheese, drizzle with 1 tbsp olive oil, and bake for 15 minutes until melted and golden. Meanwhile, cook the pasta in salted boiling water until just tender. Drain, saving a little of the pasta water.

Step 3:
Add the pasta, cream, spinach, and sun-dried tomatoes to the dish with the baked camembert. Season, and toss everything together, adding a splash of pasta water until it's coated in a creamy sauce.

Step 4:
Place the other half of the camembert on top, cut-side down. Poke the remaining garlic and rosemary into the cheese, layer the smoked ham over the pasta, and drizzle with oil. Bake for 10 more minutes until the cheese melts. Serve directly from the dish.
